Freshness is key in obtaining the fullest flavour and aromatic qualities in roasted coffee. In buying coffee beans from a store, you can never be sure how fresh the roast is - unless, perhaps, you're friends with the roaster. So we made the decision to roast our own coffee. This decision was made easier due to our proximity to an excellent source of green coffee beans: The Green Beanery in Toronto. From their website:

roasterYou can roast coffee in a variety of simple to complex ways from spreading them on a cookie sheet in and oven, to using an air popcorn popper, to using any number of electric devices.

We chose to get a Behmor 1600 roaster. It has a one pound capacity and allows for pretty good flexibility in roasts.

grinderGrinding the beans is an important step in brewing the best coffee. You want a consistent and even grind and a burr grinder is recommended.

The grinder decided to use after reading many reviews is the Rancilio Rocky Doserless. You will often see commercial versions of this grinder in coffee shops.

technivormWe use the Technivorm Moccamaster - one of only two coffee makers manufactured to meet the high standards of the European Coffee Brewing Centre. It brews the coffee at the ideal temperature of 200°F/93°C, is quiet, and handmade in the Netherlands.
